Slow Cooker Pork Tenderloin with Soy Glaze

Chicago Winters.  COLD is an understatement.  I've been telling my husband all summer 'I have a bad feeling about this upcoming winter' or 'We are overdue for a brutal few months this winter'.  I WAS RIGHT.  And I'm pissed about it. 

But instead of letting the winter blues completely take over....I'm trying to keep busy, plan fun events, and make some cozy meals in the kitchen :o)

Pork Tenderloin is one of my favorite things to cook because it is lean, extremely flavorful, and both me and my husband love it (win - win).  This one in particular is exra amazing because I made it in the slow cooker (my bff).  Throw everything into one pot, then 8 hours later you have an AMAZING melt in your mouth feast.  Woo Hoo!


I served it with brown rice and roasted broccoli.  You also could serve it with Quinoa.


Slow Cooker Pork Tenderloin with Soy Glaze

Ingredients:

  • 2 lbs Pork Tenderloin
  • 2 Tablespoons ground sage
  • 2 teaspoons salt
  • 2 Tablespoons ground pepper
  • 1 clove crushed garlic
  • Soy Glaze (recipe below)
Directions:
  1. Mix together sage, salt, pepper, and crushed garlic in bowl.
  2. Rub spice mixture all over the pork tenderloin so it covers the outside.
  3. Add one cup of water to slow cooker and at pork tenderloin.
  4. Cook on low for 6-8 hours in slow cooker.
  5. During the last hour of cooking, brush the pork tenderloin with glaze a few times then recover.
  6. At the end; remove the pork tenderloin and place on foil lined baking sheet.  Brush the pork once more with the glaze and then broil in the oven for 2-3 minutes to get more of a crust on the outside.  Repeat as much as you would like for more crisp.
  7. Serve with your choice of side and remaining glaze.  ENJOY!
Soy Glaze:

Ingredients:
  • 1/4 cup Soy Sauce
  • 3 T. Balsamic Vinegar
  • 1/4 cup Brown Sugar
  • 1/4 cup Water
Directions:
  1. Mix together all ingredients in a small sauce pan
  2. Bring ingredients to a boil then turn to a simmer until sauce thickens
